Meet The Beatrice Inn’s chef Angie Mar—who seven years ago made a career change to explore kitchen nirvana—at Dan’s GrillHampton. She’s leaving the West Village behind to compete on Team NYC against the best and brightest chefs on the East End—Team Hamptons—in Dan’s GrillHampton competition on July 21. GrillHampton is celebrating its fifth anniversary in style—with lots of smoke, sweat, grit and delicious samples!
Tell us about your most memorable meal.
A grilled Iberian pork shoulder in Seville—that was when I decided I wanted to cook.
Would you agree that chefs and farmers have a lot in common in that both are a little crazy and overworked?
I’m sure we all are, in one way or another.
Why should consumers seek out local produce and wine?
It’s important for us to support local. However, I’m also a chef who wants the best, regardless of where it is from.
What crop could local farmers grow that you would be excited to use?
I love Bing cherries, they are one of my favorite things to cook with. When I was a kid, we had amazing cherries from Eastern Washington.
If you got a tattoo tomorrow what would it depict?
I have enough tattoos, I don’t need any more.
What do you have in your pantry that would make another food pro jealous?
Whiskey-aged beef
What local ingredients will you be using in the high summer season?
Stone fruits
I could create a fine meal with just these three ingredients: beef, salt and fire.
What are you most looking forward to about being a part of Dan’s GrillHampton?
I’m looking forward to hanging out with my friends and cooking for such a great group of people.
What’s the most surprisingly tasty thing you’ve ever eaten off the grill?
Papaya
Do you think Team Hamptons or Team NYC will fare better at GrillHampton? NYC, always.
What would you do to gain an advantage over your GrillHampton competition?
Whiskey-age my beef.
