Harlow East’s Chef Jordan Andino Dishes
Harlow East, an outpost of New York City-based Harlow, has opened for its second summer on Long Wharf in Sag Harbor. Featuring fresh seafood and inventive American dishes, the restaurant serves breakfast, brunch, lunch and dinner, overlooking the picturesque boats as they enter and exit the harbor. Chef Jordan Andino will be at the helm of Harlow’s table at Dan’s Taste of Two Forks on Saturday, July 18. Here, he discusses working on the East End, the necessity of trying lobster, and the bounty of local ingredients.
What are you most looking forward to about being part of Dan’s Taste of Summer this year?
This summer, Dan’s Taste of Summer will be a great platform to re-launch Harlow East as a premier waterside restaurant in the Hamptons. With all the great attendees and press that the event garners, we are looking forward to showcasing our restaurant and the new menu!
What is one food or dish that everyone should try at least once in life?
The one dish that everybody should try is most definitely lobster. It’s succulent, sweet, buttery (depending on how you cook it) and just unforgettable in taste and texture!
What is the best pairing of food and Long Island wine?
Oysters and Bedell Cellars Sparkling Rosé
If you were to eat at your restaurant as a guest, what would you order?
As a guest, I’d definitely try the kale and quinoa salad, because of its health benefits and amazing blend of ingredients and simplicity. For my entrée, the lobster linguine is the best blend of spice, value and flavor you can get!
Describe the adrenaline rush of working in a Hamptons kitchen.
Working in a Hamptons kitchen is a great experience, but it’s definitely a trying and busy place! With all the important guests that come in and the expectations of the world’s elite, we know that we have to be on our A-game at all times. The adrenaline of the kitchen is matched only by our willingness to please all of our guests.
What drew you to work on the East End?
The Hamptons is one of the most sought-after places to be in during the summer months, and working here is a dream come true! Really, at the end of the day, no matter how difficult or busy, all you have to do is look around and just realize, “you know what… it’s still the Hamptons.”
If we looked inside your refrigerator right now, what would we find?
In my fridge right now are the bare essentials and nothing that you would expect a fine-dining chef to have: frozen pizza rolls, milk (for cereal) and blueberries.
Favorite East End-inspired meal?
Our very own Long Island lobster roll on a fried rice bun!

If you had two forks in your hands right now, what would you like to stick them in?
An Australian rack of lamb covered with a berry chutney and panko, cooked to a perfect medium
What is your favorite local ingredient?
Local micro greens are a great way to finish the plate and put the final touch on already amazing-looking food.
When you hear the word “local,” what comes to mind?
If I hear “local,” I immediately think of the island itself and the bountiful ingredients it provides.
Where do you find inspiration, inside and outside the kitchen?
Inspiration is found all around and especially in the minds of other chefs in the area.
If you were to pack a meal for the beach, what are three things you’d bring?
Bottle of rosé, charcuterie, fine cheese
A great meal always begins with…
Amazing friends and company.
Food that defines summer on the East End:
The food that most defines the summer on the East End would have to be fish and seafood! Who doesn’t think of seafood and the Hamptons in the same breath?
