Dan's Rosé Soirée Countdown: Colette Connor, Inn Spot on the Bay
At age 28, Inn Spot on the Bay’s Cheffe Colette Connor determined that she would devote her life to food. What took so long? Ask her when you sample her delightful cooking at two of the five Dan’s Taste of Two Forks events this year—Dan’s Rosé Soirée on Memorial Day Weekend (May 28) at the Southampton Arts Center and Dan’s Taste of Two Forks presented by Farrell Building Company (July 22), now in its seventh year, on Mecox Bay.
My favorite dish to pair with a fine rosé is: choucroute.
What Long Island wine is in your home wine library?
Wölffer Estate Vineyard’s Caletto.
Why should consumers seek out local produce and wine?
[For] local sustainability and [because it] supports our local bees!
Would you agree that chefs and farmers have a lot in common in that both are a little crazy and overworked?
Yes because we both are passionate to the point of insanity about our food.
What crop could local farmers grow that you would be excited to use?
Salsify (aka oyster plant).
If I got a tattoo tomorrow it would depict: honeybees—the superheroes of the food world.
Tell us about the best or most surprising thing you’ve ever eaten.
Corsican wild boar prosciutto smuggled out in a box of tobacco, via Abidjan, to Paris. It was well travelled and delicious.
What do you have in your kitchen that would make another food pro jealous?
A melanger for chocolate making, which we use to make our own tahini and almond butter too.
What local ingredients will you be using in the high summer season?
Cow peas, local lettuces, tomatoes, artichokes and zucchini.
I could create a fine meal with just these five ingredients: garlic, EVOO, sweet brown rice, Pecorino Romano, fresh herbs
What are you most looking forward to about being a part of Dan’s Taste of Summer?
Finding inspiration and synergy with, and in, other chefs’ ideas.
