Learn to make Seafood Salad Cocktail in Spicy Red Sauce from Chef Juan Juarez of Coche Comedor in Amagansett.

Ingredients:

½ lb calamari
½ cup fresh lime juice
½ lb bay shrimp
½ cup minced white onion
2 tsp minced garlic
2 tsp sea salt
½ tsp black pepper
¼ cup chopped cilantro
1 cup ketchup
2 tbs chopped jalapeño peppers
½ cup jícama
1 ea avocado, sliced

Method:

1. Blanch the calamari in boiling water for approximately two minutes, then cool in ice bath.

2. Mix shrimp, calamari, onion, garlic, salt, pepper and lime juice for 30 minutes.

3. Add chopped cilantro, ketchup, jalapeño and jícama, and mix well.

Presentation:

Spoon into glass and top with sliced avocado.
