Few things say “summer” in the Hamptons like a glorious seafood creation spread before you, says Chef Victor Pastuizaca of 75 Main in Southampton. “Seafood dishes are definitely a summer Long Island treat,” says Chef Victor, who’ll be presenting his very own treats at the second annual Dan’s Taste of Two Forks food and wine event on July 14 in Bridgehampton. What Are You Most Looking Forward To at the Dan’s Taste of Two Forks Event: As it the second annual event with a high reputation, I am looking forward to meeting with great people that come to the event and showing them my cooking techniques and culinary expertise which are showcased at 75 Main.

What is one food or dish that everyone should try at least once their in life? One dish that everyone should try is the new addition to the 75 Main menu, the lobster salad.  It is currently our most popular item and is enjoyed by many of our patrons who try it.

What quality do you most admire in a chef? Chefs that produce fresh and healthy food which genuinely has customers wanting to return for more.

What would be your one request of the cooking gods? If I were to be born again, I would want to be the world’s most skilled chef and be able to create mouth-watering dishes from any ingredients.

If I looked inside your refrigerator right now, what would I find? Lobster—it is my specialty dish.

The Perfect Drink for a Summer Night: The Perfect Drink for a summer night is the special 75 Main Bellini, which is composed of champagne and peach puree.

If you had two forks in your hands right now, what would you like to stick them in: The Soft Shell Crab and the Smoked Salmon Fettuccini

The World Ends Tomorrow. Your Last Meal Would Be: One of everything at 75 Main, as our menu list is expansive and I plan on being here for a long while!

What Are Your Favorite Local Ingredients: Seafood caught in the water off the coast of Long Island and the fresh vegetables bought at the local markets

What Is Your Guilty Food/Drink Pleasure These Days: As a chef and it being high season in the Hamptons, I often eat on the run. My guilty pleasure these days is a hamburger and soda, when no one is looking.

What’s Great About Being Part of the Cuisine Culture on the East End: The opportunity of receiving fresh ingredients such as fish and vegetables and being a part of the east end   milieu variety of unique establishments and talented chefs

What do you consider a chef’s most underrated virtue? The chef’s ability to be consistent. Working hard and making dish after dish and keeping the standards and specialties of an establishment.
