Chef Winston Lyons—who’s worked the kitchens of several Hamptons restaurants, including Bostwick’s, East Hampton Grill, East Hampton Point and Turtle Crossing—has opened the doors to Winston’s Bar and Grill, located in the East Hampton space that was formerly Nichol’s.

Lyons’ new venture, with a Caribbean-inspired seafood and steak menu, will be open seven days a week for breakfast, lunch and dinner. A number of weekly specials are planned, such as Montauk Night on Tuesdays, with dishes centered on Montauk-sourced ingredients and 2-for-1 Montauk Brewing Company drafts.

Among the breakfast options are buttermilk pancakes ($8); French toast crusted with almonds and pecans topped with an apple and banana rum sauce ($12); huevos rancheros ($13); eggs Benedict ($13); and granola topped with crunchy almonds and Caribbean fruit ($10). Signature breakfast items include the Spicy Caribbean Shrimp Omelet ($14) and the breakfast wrap with eggs, chorizo sausage, fried plantains and spinach ($12).
