With Easter right around the corner (April 20), East Hampton restaurants are busy preparing holiday specials.

Harbor Bistro (631-324-7300) is serving a three-course prix fixe for $45 including items such as shellfish bisque with mussels, clams, crab and lobster with a chive garnish; slow-roasted leg of lamb with Israeli couscous, truffle-grilled asparagus, garlic confit and lamb jus; and lemon mascarpone cake.

Nick & Toni’s (631-324-3550) is serving a la carte specials including house-cured salmon on a crispy potato cake with pea shoots and poached egg; lamb chops with roasted baby vegetables and salsa verde; and ricotta cheesecake, made with vanilla-rhubarb compote, pistachio crumble and rhubarb sorbet.

Harbor Grill (631-604-5290) will be serving specials including an avocado and shrimp martini with fresh tomato, lime, cilantro and horseradish; slow-roasted prime rib of beef with whipped potatoes, vegetables, au jus and horseradish cream; and lump crab-crusted swordfish with vegetable rice, sautéed spinach and a lemon-white wine butter sauce.

Fresh Hamptons in Bridgehampton is now open daily for lunch noon to 4 p.m. with a special brunch menu available on Saturday and Sunday. Dinner is served Sunday through Thursday 5 to 9 p.m. and on Friday and Saturday from 5 to 10 p.m. The menu features items such as creamy, oven-roasted lobster plum tomato bisque; raw local organic kale with hemp seed hearts, tomatoes, peppers, radishes and fines herbes with lemongrass vinaigrette; and wasabi-dusted local skate with sautéed ginger and kaffir lime beurre blanc, available in a quarter-pound serving, half-pound and whole-pound. 631-537-4700. freshhamptons.com

Front Street Station in Greenport is open Sunday through Thursday noon to 10 p.m. and Friday and Saturday noon to 11 p.m. Appetizers include fresh local clams on the half-shell; stuffed potato skins with diced onions and peppers topped with cheddar jack cheese and bacon; and mini crab cakes, house-made with lump crab meat, seasoned and lightly fried. Entrées include stuffed shrimp scampi with jumbo shrimp and seasoned stuffing, broiled with scampi butter; the fried fisherman’s platter with shrimp, scallops and filet of fish, lightly breaded and fried; and the granny burger with Monterey jack cheese, green peppers and onions served with French fries, coleslaw and a pickle.

Pizzetteria Brunetti in Westhampton Beach is open Thursday through Sunday noon to 9 p.m.; serving specialty pizzas including the vongole with freshly shucked and chopped local Long Island clams on top of a garlic and herb butter sauce with a fresh parsley finish; the San Gennaro with sweet Italian sausage on top of caramelized onions and roasted red and yellow peppers with sheep’s ricotta and San Marzano tomatoes; and the verde misto, wood-fired dough topped with a fig purée, mixed greens, cherry tomatoes, crumbled gorgonzola and red onion, finished with a balsamic reduction.
