How old were you when you knew that you’d have a career in food?
I was 16 working as a dishwasher—I worked for various talented chefs—I just knew.
Would you agree that chefs and farmers have a lot in common in that both are a little crazy and overworked?
Not entirely, but the hours and pressure will make you act a bit crazy.
What crop could local farmers grow that you would be excited to use?
Starches, like yuca (cassava).
What’s the best thing you’ve ever eaten?
Salmon cornets from Thomas Keller
What do you have in your kitchen that would make another food pro jealous?
What local ingredients will you be using in the high summer season?
Lots of local fish.
I could create a fine meal with just these five ingredients: lemongrass, coconut milk, green curry, Thai basil and [some] kind of fish or shellfish.
What’s one of your favorite beach drinking memories?
There are too many to choose one, but I’m happy anytime I’m at a beach bar.
What are you most looking forward to about being a part of Dan’s Taste of Summer?
Sharing the event with other local chefs.
ClambakeMTK isn’t your typical clambake. How do you think this event redefines that tradition?
ClambakeMTK attracts all kinds of people from diverse backgrounds. The challenge for us as chefs is to create something new from the freshest products the East End has to offer.
