John Ross Brings 'The Poetry of Cooking' to Riverhead
On Saturday, June 18, acclaimed North Fork chef, manager, restaurateur, columnist and writer John Ross will make an appearance at Pottery Barn at the Tanger Mall Outlets in Riverhead.
Guests can mingle with the chef as he gives cooking advice and offers samples of two recipes taken from his latest book, The Poetry of Cooking— pickled vegetables and asparagus spring rolls with dipping sauce. Ross will also be signing copies of his book. Saturday’s event is one of several demos he has planned to promote of his book this summer.
The Poetry of Cooking, published in the fall of 2015, is his third cookbook behind The Food and Wine of the North Fork and The Story of North Fork Wine. His latest publication is a cookbook that separates itself from the dozens of other cookbooks that are published each year, organized not under the conventional chaptering by ingredients and category of dish, but by seasonal availability—a criteria quite particular to residents of the East End, especially the vast farmland of the North Fork. Several of the recipes in the book are adapted from ones previously published in Ross’s North Fork Chef column in The Suffolk Times and Riverhead News Review.
Divided into 12 chapters representing the12 months, each chapter is prefaced by a food-related poem chosen by Ross, including verse by Anna-Marie Macari, Marge Piercy and George Bilgere, among others. Aiming to highlight the seasonality of various ingredients, Ross demonstrates to his readers that cooking is an art form that is not only easily accessible but also shows the variation of dishes and flavors that come with the changing seasons.
