Meet Chef Matty Boudreau from the Restaurant at Baron’s Cove in Sag Harbor at Dan’s GrillHampton presented by Pat LaFrieda (July 21) hosted by Robert Irvine and Dan’s Taste of Two Forks presented by Farrell Building Co. (July 22) hosted by Alex Guarnaschelli. July 21 and 22 will be just two of the very busy nights of Boudreau’s summer. He says that he works hard to feature local produce because there’s “less environmental impact as well as better tasting ingredients.” What will he be using the most of in the high summer season? Tomatoes, of course.
How old were you when you knew that you’d have a career in food?
My first job was outside of Fenway Park in Boston selling sausages and franks. I was eight at the time. My father owned the cart and I would go after school and spend the days helping work the grill while hoping to see the curse of the Bambino finally end—that took a few more years, but my career was decided and I was on the way to becoming a chef.
Would you agree that chefs and farmers have a lot in common in that both are a little crazy and overworked?
Both can really only do these jobs if they truly love what they do. The hours are painfully long and full of stress but to have the ability to feed people is truly awesome. You gotta eat every day, and being a part of that is an honor.
What crop could local farmers grow that you would be excited to use?
Everything grown locally out east is amazing—tomatoes and corn top my list, but if we could have more of anything it would be citrus fruits.
If I got a tattoo tomorrow it would depict: cooking a whole hog.
I could create a fine meal with just these five ingredients: fresh fish, EVOO, garden herbs, sea salt, any soft greens.
