Moody Tongue Sushi Launches Fall Omakase at Hilton West Palm Beach

Michelin Selected Moody Tongue Sushi at Hilton West Palm Beach (600 Okeechobee Boulevard) has launched a new 13-course omakase menu and beer pairing, starting this Thursday, October 9. The fall-inspired menu is priced at $185, with a curated beer pairing for an extra $75, and is available Thursday through Saturday evenings at 6, 7:30 and 8:30 p.m. Moody Tongue Sushi will also offer an eight-course omakase dinner during a 5 p.m. seating priced at $95 with a beer pairing for $45.

The new menu will include a Hokkaido Scallop Hand Roll with wasabi, corn, potato skin and bacon fat, paired with the Allstar Peach Wild Ale. According to Moody Tongue Brewmaster and Co-Founder Jared Rouben, this specialty lambic-style ale has hints of Chardonnay, and the Allstar peaches are sourced from Mick Klug Farm in St. Joseph, Michigan.
Other new menu items include Hamachi with miso mole sauce, sesame seeds and micro cilantro, paired with a Cherry Oud Bruin, featuring Balaton cherries from the same Michigan farmer. “This beer was created for the Pinot Noir fans,” Rouben says.

The omakase menu concludes with Tiramisu featuring mascarpone, matcha and cocoa, paired with the 2022 vintage of the brewery’s Bourbon Barrel Aged Gingerbread Imperial Stout. “This dessert and beer pairing might be my favorite, featuring notes of gingerbread cookies dipped in Bourbon chocolate espresso,” Rouben adds.
In addition to the West Palm Beach location, Moody Tongue currently operates two eateries in Chicago and two in New York City. Moody Tongue’s Chicago location was awarded stars in the Chicago Michelin Guide in 2021, 2022, 2023 and 2024.
